BERRY FRENCH TOAST :

If you're following the book's recipe : crazy about cupcakes the actual name is Maple Walnut Cupcakes (page 68). The following is just the recipe for the cupcake itself. I'll post the recipe for the frosting after this. Also, we've made a little tweaks to the recipe so they might not all be in the book. 

INGREDIENTS : 

3/4 cup unsalted butter, at room temp.

1/2 cup granulated sugar

1/2 cup of maple syrup

1 tsp vanilla extract 

3 large eggs

2 cups all-purpose flour

2 1/2 tsp baking powder 

1 tsp salt

1/4 cup milk 

1/2 cup chopped walnuts

* Recipe doesn't call for this, but Mom added 1/2 tsp of cinnamon & 1/4 cup of milk. Cinnamon for flavor & the milk was because the batter was too thick. 

*Also, do NOT add 1/2 cup of chopped walnuts to the batter. 

* Do NOT use pancake syrup. It is not the same as Maple Syrup, so do not use it. 


Process : 

1. Preheat the oven to 350. Insert liners into a medium cupcake pan.

2. In a large bowl, cream together the butter & sugar with an electric mixer on medium speed until fluffy, 3-5 minutes. Beat in the maple syrup. Add the vanilla & eggs. Beat until mixture is smooth.

3. In a separate bowl combine the flour, baking powder, & salt. 

4. Add the flour mixture to the creamed mixture, alternating with the milk. Beat well. Stir in the walnuts.

Side note : we did not add the walnuts!

5. Fill the cupcake liners three-quarter full. Bake for about 20 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in the pan.  



CREAM CHEESE FROSTING 

INGREDIENTS :

1 8 oz package cream cheese, at room temp. 

6 tblsps (3/4 stick)

Unsalted butter, at room temperature

4 cups confectioners sugar

1 tsp vanilla extract 

1/4 maple syrup 


Process : 

1. In a medium bowl cream together the cream cheese & the butter with an electric mixer on medium speed until smooth.

2. Slowly sift in the confectioner's sugar & continue beating. Mix until all lumps are gone. Add the vanilla & mix until fully integrated.
